Warm weather is here, and summer is within grasp…and summer in the South means boils. Whether it is a shrimp boil, crab boil or crawfish boil, it is a fun thing to do with your friends and always brings good conversation, full bellies and spice-covered fingers.
We had a shrimp boil this past weekend. Aside from being fun and delicious, having a boil couldn't be easier. Boil a hug pot of water, throw in whatever you want in there and then drain and dump it out on a newspaper-lined table for all to enjoy. For us in the South, the shrimp boil usually means shell-on shrimp, corn, red potatoes, onion and sausage all cooked in water where copious amount of Old Bay have been tossed in. Sully, having roots in New Orleans, also likes to add some Zatarain's liquid crab boil, garlic heads, mushrooms and lemons.
Shrimp Boil Pizza
Serves 4- 1 pizza crust (I used Boboli thin crust…but whatever your favorite is is fine…or make your own!)
- 1/2 cup ranch dressing
- 1/2 lb boiled shrimp, peeled and cut lengthwise in half
- 5 boiled red potatoes, thinly sliced
- 5 boiled large white mushrooms, thinly sliced
- 4-5 oz boiled sausage (I used turkey kielbasa), thinly sliced
- 4-5 boiled half ears corn, kernels cut from cob
- 5 cloves boiled garlic, diced
- 1-2 cups mexican shredded cheese
- 2 green onions, diced
- a couple of shakes of Old Bay
Preheat oven to 450 (or follow direction of your pizza crust). Spread ranch on crust. Top with shrimp, potatoes, mushrooms, sausage, corn and garlic. Top with shredded cheese, green onions and dust with Old Bay. Bake for 10-12 minutes (broil at the very end if desired) and enjoy!
